Curry Sauce

Yield: About 4 servings (about 1/2 cup (120 mL) each)

4 cloves garlic, minced

1/4 cup (40 g) finely chopped onion

2 tablespoons flour

2 teaspoons curry powder

1/4 teaspoon cayenne pepper

2 cups (475 mL) chicken broth

1/4 cup (60 mL) dry white wine or water

1 tablespoon cornstarch

Salt, to taste

Freshly ground black pepper, to taste

1. In a lightly greased medium saucepan, sauté the garlic and onion 2 to 3 minutes; stir in the flour, curry powder, and cayenne pepper and cook 1 minute.

2. Mix in the broth and heat to boiling; stir in the combined wine and cornstarch and boil, stirring until thickened, about 1 minute. Season to taste with the salt and pepper.
